Shakshuka with tofu and egg

Good to know:
Shakshuka is Arabic and means something like ‘mixture’. This delicious dish comes from North Africa and is particularly popular for breakfast in Israel.
Ingredients

onion, cut into 1 cm wide wedges
2
garlic cloves, finely chopped
1
fresh mild chili, deseeded and finely sliced
3 tbsp.
olive oil
2
red bell pepper, deseeded and cut into 0.5 cm strips
½ tsp.
chili powder
½ tsp.
cumin
½ tsp.
Ras-el-Hanout
1 kg
Tomatoes, cut into 1 cm cubes (alternative: 2 x 400g cans of tomatoes)
1 tsp.
salt & pepper

1 pkg.
omami Tasty Nature Tofu, cut into 2 cm cubes
1
handful of fresh chopped flat-leaf parsley or coriander leaves
Preparation
- Sauté the onion, garlic and chilli in 3 tbsp olive oil in a large pan over a medium heat for 2-3 minutes. Add the bell pepper strips, chili powder, cumin and ras-el-hanout to the pan and fry over a medium heat for 2-3 minutes, turning occasionally.
- Deglaze with the diced tomatoes, stir well, bring to the boil briefly and season with 1 teaspoon each of salt and pepper. Allow the sauce to simmer gently on a low heat for 10-15 minutes. The slow simmering helps the flavors to combine well and the sauce to reduce slightly.
- Season the sauce again with salt and pepper to taste. Use the back of a spoon to make small indentations in the sauce, carefully crack the eggs into them and poach, covered, over a low heat for 5-7 minutes until the egg whites have set and the yolks are still slightly runny. You can also poach the eggs for longer if you wish.
- In the meantime, heat 1 tbsp olive oil in a medium frying pan over a medium-high heat and fry the tofu cubes for 1-2 minutes until crispy on all sides.
- As soon as the eggs are ready, remove the pan from the heat. Sprinkle the shakshuka with the tofu cubes and fresh parsley or coriander and serve straight from the pan.
